Yeastime’s technology arises from a study in the field of bioacoustics, a multidisciplinary discipline that integrates studies of physics and biology so as to study and understand evolution considering mechanical pressure as a standing factor. We approach this matter by a multidisciplinary study, indeed our team is multifaceted and assembled according to the needs in the fileds of electronic engineering, physics, IOT and biotechnology. We decided to focus on the ‘’microworld’’ thus we started studying and testing the biology of the yeast Saccharomyces cerevisae. This model organism does not only represent a pivotal microorganism in food production for the production of consumable outputs but it is also a target for oil, proteins and enzymes production. Thus, what we added as a value in this field is the finding of a theoretical parameter, the relative mechanical force, that allows the comparison among all the fragmented studies.
Yeastime Company has developed an innovative ultrasound device called YT01, equipped with piezoelectric ceramic transducers. This device generates sound waves that create stationary mechanical pressure, which has a significant impact on cell growth, development, and reproduction. The sound waves increase membrane permeability and facilitate the passage of nutrients while simultaneously eliminating inhibitory metabolites present on the cell surface.
This action prevents the slowing down of internal chemical reactions and improves cell functionality. Progress in cell growth, development, and reproduction through this technology will help optimize production processes, reducing processing time, energy consumption, and improving production quality.
YT01 represents a breakthrough in the biotechnological production process, enabling real-time automation and monitoring of fermentation through innovative cloud technology. With sophisticated sensors, the device monitors critical parameters such as temperature, CO2, density, pH and TVOC (harmful gases), ensuring an efficient and high-quality production process.
However, Yeastime's real innovation that sets it apart from the competition is the integration of ultrasonic waves into the fermentation process. This technology acts directly on cell metabolism, accelerating fermentation and greatly improving efficiency and production time. YT01's competitive advantage lies in its ability to significantly reduce operating costs, enabling companies to invest more effectively and address sustainability challenges in a more timely manner.
