In Italy, over 1.5 billion euro is wasted every year due to wrong allocation of staff hours and supplies in the restaurant sector. Olivia through its AI algorithms takes internal data sources from the restaurant and combines them with external data sources (such as weather, holidays, sporting events and more) to output the quantity that will be sold in the next period selected by the user. This number can be predicted for each item on the restaurant's menu and thanks to this tool, the supply manager is able to purchase more correct quantities of supplies, reducing waste as much as possible, and to be able to source the right amount of staff according to needs and the estimated number of place settings. Our forecasts have a statistical accuracy of 97% and is mainly addressed to restaurants chains and canteens.
